Truly a cheese that captures the terroir of where it is made in Cumbria. St James is made on a very small scale by Martin Gott on Holker Farm who makes his very own starter cultures. The cheeses are washed individually and turned in brine three times a week which gives them distinctive orange-yellow rind. The resulting flavours are deep and complex, and quite simply, blow us away. Well done Gott & Co.

Meet the Maker

After training with a host of dairy royalty including Mary Holbrook, Martin Gott established St James in 2006. On his Cumbria farm, Martin produces raw milk sheep cheese from his herd of Laucane ewes with homemade starter culture which leads to fantastic variation.
