We think of Westcombe as The Godfather amongst cheddars... nothing mild about it, a real flavour explosion. We get citrus throughout with the odd pop of hazelnut and caramel. It's as traditional as they come with the same recipe being followed for over 100 years - raw milk, clothbound. It's known in the trade as the five mile cheddar - because you're still tasting it five miles down the road. For us, this is usually the point where we're turning round, heading back to Westcombe Farm and buying more.

Westcombe Farm in Somerset has been making cheddar for over 100 years. The Calver family understand that the most important aspect of their process is milk. They credit the unique terroir and happy cows for the rich raw milk that produces their traditional cheddar.
